I had planned to head down to Soulard and enjoy the Mardi Gras celebration on Saturday. However, Bruce asked me to work at Caddy shack. He asked if I would prepare the buffet meal. I gladly took the offer.
I prepared Jambalaya and Red Beans and Rice. The Jambalaya was a very simple one made with shrimp, peppers, onions, garlic, rice, fresh herbs and chicken stock. The red beans were prepared with green peppers, onions, garlic, Cajun seasoning, red wine and a can of beer. Everything went over very well and all of the customers enjoyed the food.
